After spending the summer in the sun, the olives reach maturity in autumn and we harvest them from November to December. We first harvest table olives, which are selected and picked by hand to preserve their flavours. We then harvest the olives for tapenades and oils. Our oils are produced using the first cold pressing: the olives are simply pressed, and the juice is then naturally decanted, revealing the pure, high-quality oil.

We also offer spreads that are perfect as appetisers: two tapenades made from green and black olives, and a vegetarian version made from olive pulp and tomato.

The organic AOP Provence olive oil, matured olives, captivates with its roundness and smoothness on the palate. Before extraction, the olives are carefully left to mature, allowing this controlled fermentation to reveal subtle aromas of candied and black olives. We also offer flavoured oils. After harvesting, our olives are mixed directly with aromatic herbs during the oil-pressing process. This method of pressing with fresh ingredients allows the flavours to develop, giving our oils a unique taste.
